Cooking my way – Brown Rice with Veggies
I prefer my meals to be simple, fast and nutritious. Here’s a quick recipe for a healthy dinner.
- Ingredients:
- Brown Rice 2cups
- Frozen mixed vegetables (carrots, corn, green beans and peas) 1 bag (12 OZ)
- Onion medium size
- Avocado oil 3 tbs
- Zucchini green fresh 4 pcs
- Turmeric powder 1 tsp
- Ground black pepper ½ tsp
- Parsley flakes 1 tbs
- Oregano dry 1 tsp
- Kosher sea salt 1tsp or to taste
- Parmesan cheese grated 2 tbs
Preparation:
In a saucepan, combine 2 tbs of avocado oil, brown rice, a bag of frozen mixed vegetables, diced onion, turmeric, black pepper, parsley flakes, dried oregano, and salt. Pour in 3 cups of water and bring to a boil while stirring occasionally. Reduce heat and simmer for 25-30 minutes or until the liquid is fully absorbed and the rice is tender.
Slice the zucchinis into rounds and arrange two of them at the bottom of a glass casserole dish that has been greased with one tbs of avocado oil (either a 3-quart round or a square 9x13x2 with a lid). Next, add the rice mixed with vegetables. Top it off with the remaining zucchini rounds and sprinkle grated parmesan cheese over everything.
Preheat the oven to 400°F and bake with the lid on for 30 minutes, then continue baking uncovered for an additional 10-15 minutes.
